Bubble & Squeak

If you are looking to use up your Christmas leftovers then look no further than our deliciously simple Bubble & Squeak recipe from our restaurant The Orangery at St Elphin’s Park.

Ingredients

  • 500g mash potatoes (Maris Pipers are a great all-rounder)
  • 150g shredded blanched Brussel sprouts
  • 50g chopped chestnuts
  • Salt & pepper
  • Seasoned flour to coat
  • Olive oil for cooking

Method

  1. Place the mashed potatoes, Brussel sprouts and the chopped chestnuts into a mixing bowl and mix together
  2. Season with salt and pepper to taste and mix once again
  3. Form the Bubble & Squeak mixture into patties, aim to create patties that are the same size as the palm of your hand
  4. Lightly dust the patties with the seasoned flour 
  5. Place a non-stick pan on a medium heat and pour in a little olive oil
  6. Cook the patties on each side for around 2-3 minutes until crisp and brown
